And just like that, the first season of ION at Sea has come to a close.

From 19 June to 4 October 2026 ION Harbour’s dining experience extended beyond the rooftop of Iniala Valletta and onto the water. Aboard a Riva 44, ION at Sea became Malta’s first floating chef’s table, offering private dining for up to five guests each evening in the Grand Harbour.

During Thailand’s quiet season, the team from Aulis Phuket, the chef’s table at Iniala Valletta’s sister property, Iniala Beach House, came to Malta for the summer. Head Chef Charlie Wilson and Manager Arsen Brahaj brought the intimacy of Aulis on board: a seasonal tasting menu of Maltese produce from land and sea, finished at the table, with every course introduced by the chef who cooked it.

Evenings passed in the Grand Harbour as the sun dropped behind the bastions, with the Three Cities on one side and Valletta on the other. For those who wanted to make a day of it, the Ultimate Cruise headed along Malta’s southern coastline in the afternoon, with time for a swim before dinner.
