Using both the bones and meat from the rabbit, our stuffed rabbit dish embraces a zero-waste approach and showcases locally sourced, sustainable ingredients.
The rabbit, which is sourced from Żurrieq, is stuffed with lemon thyme and oyster mushrooms, then steamed and wrapped in Swiss chard from Renny’s farm. It’s served atop a jubilee sweetcorn purée and finished with a sauce crafted from roasted rabbit bones, and juices thickened with preserved lovage stems and pickled tapioca. Accompanying the dish is a doughnut made from buckwheat flour, the braised legs of the rabbit, Lardo and onion jam, served on a puree made from pickled walnuts.
