This month, we introduced our new seasonal menu at ION Harbour – which has been created to reflect the flavours of the season, showcasing – as always – local, sustainably-sourced ingredients at their peak.  Highlights include:

Hokkaido Pumpkin
Pumpkin from Ta’ Guzman with sticky yolk from Red Earth organic farm, and Benedettin cheese sauce infused with rosemary

Buckwheat Custard
Strawberries from Siggiewi with buckwheat cooked in fresh cow milk from Ta’ Zeppi, black mint oil, topped with a frozen buttermilk custard ice cream.

Each dish tells a story – of land, sea, and the unique terroir of Malta.
